Cream is a dairy product that is made by concentrating the fatty part of milk. It is used directly as a food product in different concentrations and also in production of butter, sour cream and other products.

Hygienic positive displacement pumps are ideal for handling cream because they provide gentle and efficient transfer of viscous and shear-sensitive products. These pumps maintain a consistent flow rate, minimizing the risk of product degradation. They are designed to handle the delicate nature of cream without causing separation or damage to its structure. Additionally, these pumps are easy to clean and sanitize, making them suitable for dairy applications where hygiene is crucial.

Centrifugal pumps may be used to pump raw milk to the centrifugal separators, although some plants use positive displacement pumps here simply for commonality of equipment. Viking hygienic positive displacement pumps are then used to transfer the higher fat, higher viscosity cream to blending tanks where it is mixed with skim milk to achieve a standard fat content for the type of cream being produced. Then they pump the standardized cream to homogenizers, pasteurizers and finally to packaging or further processing.
